花生酸化油的理化性质测定及脂肪酸组成分析

摘要: 采用气相色谱质谱联用(GCMS)的方法分析了花生酸化油的脂肪酸组成,并对其理化性质进行了研究,实验结果显示,花生酸化油的酸值(KOH)为8345 mg·g-1,碘值(I2)为97 g·(100 g-1,皂化值为18553 mg·g-1,水分及挥发物含量为159%;主要脂肪酸为棕榈酸(1465%)、硬脂酸(445%)、油酸(3218%)和亚油酸(4385%),其中不饱和脂肪酸的含量高达7911%,具有较高的工业应用价值。

Abstract: Physicochemical properties ofpeanut acidified oil were as follow: Acid value(KOH) 8345 mg·g-1, iodine valueI2 97 g·(100 g-1, saponification valueKOH 18553 mg·g-1, content of water and volatile matter 159%. Thefatty acid composition of peanut acidified oil was also analyzed by gas chromatography mass spectrometry (GCMS).Among determined fatty acids,linoleic acid (4385%) and oleic acid (3218%) were the highest, followed by palmitic acid (1465%) and stearic acid (445%).The content of unsaturated fatty acid is 7911%, which has high industrial application value.
