摘要: 为提高鱼皮明胶膜的品质与性能,本研究以罗非鱼皮为原料,研究不同浓度KOH溶液预处理对明胶得率和明胶膜性能的影响。结果表明:随着KOH溶液浓度的增大,明胶得率降低,吸光值减小,表明明胶的色泽和透光度增加;通过测定膜的色度、透光率和水蒸气透过率发现,当KOH溶液浓度达到07 mol·L-1及以上,明胶膜表现出较好的感官和阻隔性能;同时明胶膜的水溶性和断裂伸长率在KOH溶液浓度为07 mol·L-1时达到最大值,表现出良好的降解性能和机械性能;SEM表明,KOH溶液浓度在07 mol·L-1及以上,明胶膜的结构比较致密光滑;XRD和FT-IR谱图表明当KOH溶液浓度由04 mol·L-1增加到08 mol·L-1时,明胶膜的结晶区增加。上述结果表明:不同浓度KOH溶液预处理对罗非鱼皮明胶膜性能具有显著影响,并且综合评价各指标,以07 mol·L-1预处理制备的明胶膜性能较好。

Properties of Gelatin Film from Tilapia (Oreochromis Niloticus) Skin

Abstract: In order to improve the quality and performance of fish gelatin film, tilapia skin was used as raw material to study the effect of pretreatment with different concentrations of KOH solution on gelatin yield and gelatin film properties in the study. The results showed that with the increase of the concentration of KOH solution, the yield of gelatin decreased, and the color and transmittance of gelatin increased by the absorbance decreasing. The gelatin film exhibited better sensory and barrier properties when the concentration of KOH solution concentration reaching 07 mol·L-1 and above by measuring the chromaticity, light transmittance and water vapor permeability (WVP) of gelatin film. And the water content (WC), water solubility (WS), and elongation at break(EAB) of film showed good degradability and mechanical properties when the KOH concentration was 07 mol·L-1. Scanning electronic microscopy (SEM) showed the gelatin film structure became more compact and smooth with the KOH concentration rising to 07 mol·L-1 and above. Fourier transform infrared spectra (FT-IR) and X-ray diffraction (XRD) patterns revealed when the KOH concentration enhanced from 04 mol·L-1 to 08 mol·L-1, the crystalline region of gelatin film was increased. The above results showed that pretreatment with different concentrations of KOH solution has a significant effect on the performance of tilapia skin gelatin film, and comprehensive evaluation of each index showed that the gelatin film prepared with 07 mol·L-1 pretreatment has better performance.
